As a teacher, there is not much time to eat. Or to eat healthy. With only 30 minutes for lunch (that includes preparing it), you tend to eat unhealthy foods and/or scarf down your food. Fortunately teaching science has its perks, which include having a fridge near your room, if not in it. So you have a place to bring something quasi healthy to eat.
If you're not too busy at night and have time to do a little food prep, you can make a quick and delicious sandwich. A bento box works well for packing it, or you could just have several separate small containers. I'm not a huge meat person, so my sandwich doesn't include meat, but it easily could. I start with two pieces of whole grain bread, mustard (love it, can't get enough, leave it in the fridge at school), a piece of cheese and then a series of veggies. Whatever you like. I used swiss cheese, alfalfa sprouts, cucumbers, tomatoes,and red onions. Everything is separate (you can put the cheese on the bread) and then when it's time to eat you just assemble it. Another quick side dish I liked to eat at school was a sweet potato. Just a few minutes, depending on the microwave, delivers an extremely nutritious and delicious meal.
Now that I get to teach from home, I can quickly prepare my ultimate favorite sandwich. You need bread (any kind is fine, but jalepeno cheese bread is the best!), and then you combine in a hot skillet, artichoke hearts, sun dried tomatoes, roasted red bell peppers (from a jar) and red onions. I warm the bread in the pan too. Top it off with a little mayo, swiss or havarti cheese and some guacamole. It's REALLY good!
I've been following about a dozen food blogs lately, so as you can see they are starting to rub off on me!!

Sweet potatoes are delicious raw!! I could not bother to cook for myself so I eat almost everything like that.

Stacey and I are vegetarians. Sometimes we get into a cycle where we will sprout our own seeds for sandwiches and meals. Our favourites are alfalfa, radish, lentil, clover, adzuki, and occasionally a few others.
I somewhat am attracted to the idea of going raw, because I do feel that food loses a lot of vital energy once it gets cooked.
But, we are just vegetarians for the time being.
